Description

  • General description: Amyloglucosidase, a disaccharide enzyme is a member of the alpha-glucosidase type.[1] It is produced by several species of Aspergillus genus.[2]
  • Application: Amyloglucosidase from Aspergillus niger is used to hydrolyze α-D-glucosides. It may be used in the brewing of beer and in the production of bread and juices. Amyloglucosidase, from Sigma, has been used to hydrolyze glycogen into glucose monomers in order to study lipid accumulation in skeletal muscle [3].
  • Biochem/physiol Actions: Amyloglucosidase from Aspergillus niger is capable of hydrolyzing the α-D-(1-4), the α-D-(1-6), and the α-D-(1-3) glucosidic bonds of oligosaccharides [6].
  • Unit Definition: One unit will liberate 1.0 mg of glucose from starch in 3 min at pH 4.5 at 55 °C.
  • Physical form: Suspension in 3.2 M (NH4)2SO4 solution, pH approx. 6.0
